沙爹牛扒
材料:
牛柳280克    洋蔥,切粒半個  青/紅椒各半隻  蒜茸1湯匙  乾蔥茸1湯匙  沙爹醬1-1/2湯匙
調味:
梳打粉1/2茶匙  水1-1/2湯匙  糖1/2茶匙   生抽1-1/2茶匙   老抽1/2茶匙  油1湯匙
獻汁;
水5湯匙  糖1/2茶匙  鹽1/4茶匙  生粉1茶匙  生抽1茶匙  老抽1/2茶匙
做法:
  1. 將牛肉洗淨,切厚片,用刀背拍鬆,加調味料醃20分鐘 。
  2. 下3湯匙油,將牛柳煎至八成熟盛起 。
  3. 燒2湯匙油,爆香配料及沙爹醬,倒入獻汁煮滾,牛柳回鑊兜勻上桌 。

    Chopped shallot 1Tbsp   Satay sauce 1- 1/2Tbsp
    Seasonings
    Cooking soda 1/2 tsp    Water 1- 1/2 Tbsp   Light soya sauce 1- 1/2 tsp   Dark soya sauce 1/2    Oil 1 Tbsp
    Sauces
    Water 1/4 cup   Salt 1/4 tsp   Sugar 1/2 tsp   Cornstarch 1 tsp  Light soya sauce 1 tsp   Dark soya sauce 1/2 tsp
    Method:
    1.       Rinse beef fillet, wipe dry and cut into large cubes, mix with seasonings and leave for 20 min.
    2.       Heat 3 tablespoons oil, fry beef cubes in oil until 80% cooked, remove.
    3.       Heat 2 tablespoons oil, saute all vegetables with satay sauce, add beef cubes to wok and fry well together
