XO醬牛柳粒
材料:
牛柳160克  西芹160克  紅椒1隻  XO醬1湯匙
蒜茸1茶匙
調味;
生抽1/2湯匙  糖1/2茶匙  胡椒粉1/8茶匙  生粉1茶匙  水1湯匙  油1茶匙
獻汁:
水3湯匙  老抽1/3湯匙   蠔油1/2湯匙  糖1/3茶匙  生粉1/2茶匙   麻油,胡椒粉少許1/3茶匙
做法:
  1. 將牛柳洗淨,抹乾,切粒,加調味拌勻 。
  2. 西芹及紅椒切粒 。
  3. 燒熱2湯匙油,炒熟西芹,以1/3茶匙鹽調味,贊入3湯匙水炒透,盛起,濾去水份 。
  4. 牛柳泡油,取出備用 。
  5. 燒1湯匙油,爆香蒜茸,XO醬及紅椒粒,將牛柳粒和西芹回鑊,倒入獻汁燒滾後,拌勻 。
  6. Ingredients:
    Beef fillet 160 g     Celery 160 g    Chilli 1     XO sauce 1 Tbsp   Chopped garlic 1 tsp
    Seasoning:
    Sugar 1/2 tsp    Cornstarch 1 tsp   Light soya sauce 1/2 tsp  Pepper 1/8 tsp   Water 1 tbsp
    Oil 1 tsp
    Method:
    1.       Rinse beef fillet, wipe dry and cut into cubes, mix with seasonings
    2.       Cut celery and chilli into cubes.
    3.       Heat 2 tablespoons oil, stir-fry celery, sprinkle with 1/3 teaspoon salt and 3 tablespoons water, fry well and remove, drain well.
    4.       Quick-fry beef cubes in oil, remove.
    5.       Heat 1 tablespoon oil, saute garlic, XO sauce and chilli, return beef cubes and celery to wok and add sauce, fry together and dish
